BLT Hen Salad – Nicky’s Kitchen Sanctuary


My trick for the final word flavour with this salad is to cook dinner the bacon on a rack within the oven, with the rooster breasts on a tray beneath, so the bacon fats drips onto the rooster. The tomatoes are additionally evenly roasted within the oven.
All served up on a mattress of lettuce with some jammy soft-boiled eggs.

INSTRUCTIONS 

  • Preheat the oven to 200°C/400°F (fan).

  • Place the rooster breasts on a baking sheet and drizzle with the olive oil. Sprinkle with a pinch of salt and pepper. Place a wire rack over the rooster, and add the bacon in a single layer (so the juices from the bacon drip onto the rooster).

    3 rooster breasts, 1 tbsp olive oil, ¼ tsp salt, ¼ tsp freshly floor black pepper

  • Bake for Quarter-hour, or till the bacon is crisp. Take away the wire rack and the bacon, and put aside the bacon to chill.

    8 strips streaky bacon

  • Add the tomatoes to the rooster. Spoon any oil within the backside of the tray over the tomatoes and sprinkle with a pinch of salt and pepper. Place the tray again within the oven and bake for 10 to fifteen minutes, till the rooster is browned and now not pink within the center.

    12 cherry (grape) tomatoes

  • In the meantime, place the eggs in a pan of chilly water, so the water is simply protecting them. Carry to a boil, then simmer for six minutes—this may give them a barely runny heart; cook dinner for 3 minutes extra for firmer heart. Flip off the warmth and switch the eggs to a bowl of ice water. Let cool for five minutes, then rigorously roll the eggs on a piece floor to interrupt the shells. Peel off the shells and slice the eggs in half.
