Fast Hen Laksa – Nicky’s Kitchen Sanctuary


This fast hen laksa is a aromatic and spicy soup, that includes tender hen, noodles, and a wealthy coconut broth infused with fragrant spicy laksa paste, lemongrass, ginger, and garlic. Garnished with contemporary coriander and a squeeze of lime, it provides a harmonious steadiness of warmth, creaminess, and depth of flavour, making it a comforting and satisfying soup. INSTRUCTIONS 

  • Warmth the oil in a wok over a medium warmth.

    1 tbsp oil

  • Add the garlic, ginger, lemongrass paste, chilli and fish sauce and fry, stirring continually for two minutes.

    3 cloves minced garlic, 2 tsp ginger paste, 1 tsp lemongrass paste, 1 finely chopped crimson chilli, 1 tsp fish sauce

  • Stir within the laksa paste and fry for an extra 2-3 minutes till effervescent and aromatic.

    200 g (7oz) laksa paste

  • Add the coconut milk and hen inventory. Stir collectively, flip up the warmth and convey to the boil.

    400 ml (14 oz) jar full fats coconut milk, 300 ml (10.5 fl oz) hen inventory

  • Add the shredded hen, cooked noodles, beansprouts and lime juice.

    1 small cooked rotisserie hen, 300 g (10.5 oz) cooked contemporary vermicelli noodles, 200 g (7 oz) contemporary beansprouts, 1 tbsp contemporary lime juice

  • Prepare dinner for 3-4 minutes, protecting every part transferring across the wok, till the hen, noodles and beansprouts are sizzling.

  • Flip off the warmth and use a set on tongs to divide the hen, noodles and beansprouts between 4 bowls.

  • Then serve the laksa topped with contemporary coriander, limes wedges, chilli crisp and crispy fired onions.
